Citrus Marinated Olives
- 2 cups assorted olives, rinsed and drained
- 3/4 cup extra virgin olive oil
- 3 orange slices
- 3 lemon slices
- 2 sprigs fresh thyme or rosemary
- Red pepper flakes to taste
Combine all ingredients in an airtight container and allow to marinate overnight.
Serve at room temperature and pair with a medium-bodied dry red wine like Anna Pesä Malbec 2019.
