Sweet Corn & Jalapeño Hummus
- 1 – 24 oz. can garbanzo beans (drained)
- 1/2 cup roasted jalapeño puree
- 2 roasted jalapeño peppers
- 1 roasted serrano pepper
- 1 TBSP ground cumin
- 1 TBSP lemon juice
- 2 cups roasted sweet corn
- 3 fresh garlic cloves
- 1 cup olive oil (more if needed)
- Salt (to taste)
- Pepper (to taste)
Blend all ingredients in the food processor until creamy.
Serve with pita chips or crackers and a Red Assarita.
