Sweet Corn & Jalapeño Hummus

  • 1 – 24 oz. can garbanzo beans (drained)
  • 1/2 cup roasted jalapeño puree
  • 2 roasted jalapeño peppers
  • 1 roasted serrano pepper
  • 1 TBSP ground cumin
  • 1 TBSP lemon juice
  • 2 cups roasted sweet corn
  • 3 fresh garlic cloves
  • 1 cup olive oil (more if needed)
  • Salt (to taste)
  • Pepper (to taste)

Blend all ingredients in the food processor until creamy.

Serve with pita chips or crackers and a Red Assarita.
